Garlic Dill Roasted Chickpeas

Roasted chickpeas are a great high protein, high fiber snack food! They are a healthy alternative to crackers or chips— and are incredibly easy to make at home. You can also top your salad with the roasted chickpeas— it adds a nice, savory crunch! I first fell in love with roasted chickpeas when I was on a trip in India. Roasted chickpeas were a popular street food— made right there in front of your eyes! Roasted chickpeas became my go-to snack food on day adventures throughout India— and now are a favorite here at home.

There are many different variations you can do to make the roasted chickpeas. Play around with different spices like cumin, chili powder, and cayenne for a spicy hot chickpea— or just stick to the basics with a dash of salt and pepper!

Garlic Dill Roasted Chickpeas

Ingredients
  1. 1-15 oz can of chickpeas (or ~1.75- 2 cups cooked)
  2. 1 tbsp avocado oil
  3. 1/2 tbsp garlic powder
  4. 1/2 tbsp of dill
  5. ⅛ tsp salt
Instructions
  1. Preheat oven to 400 F (I use a roast setting).
  2. Rinse and dry the chickpeas, if using canned or packaged. Pour the chickpeas in a bowl with the oil and spices. Stir until all the chickpeas are coated.
  3. Place parchment paper on a pan that has edges. Put in the oven. Stir frequently to prevent chickpeas from burning.
  4. After 35-40 minutes, remove chickpeas from the oven.
  5. Enjoy as a snack or top on your salad!
  6. Store leftovers (if there are any!!) in an air-tight container.
