Overnight Oats

Overnight oats are really simple! It takes about ~5 minutes (or less if you are really speedy) to prep the mix. The key is: you must do it the night before. If you are anything like me, you would much rather prep breakfast the night before because in the morning you are rushing to get out the door. Overnight oats to the rescue!

Overnight oats are really simple, easy balanced breakfast!

  1. 2/3 – 1 cup dry oats
  2. 2 tablespoon of chia seeds
  3. 1 banana (chopped into bite-size slices)
  4. 1 cup frozen organic blueberries
  5. 1.5 cups of unsweetened plant-based milk (e.g. almond or soy).
Optional add-ins
  1. 1 tsp of vanilla extract or cinnamon
  2. 1-2 pitted and chopped dates {to sweeten it up naturally}
  3. 2-3 walnuts (chopped) or 6 almonds (chopped) { for more crunch, healthy fats and protein}
  4. extra tbsp of chia {to make it thicker}
  1. Stir the ingredients together in a glass jar, container, or a cup that you can cover. The mixture may look a little soupy, but the chia will expand overnight. If it looks too thick, add a little extra liquid.
  2. Cover the oats and place in the refrigerator overnight. In the morning, mix up the oats again. Enjoy cold or heat it up!
