Strawberry Banana Popsicles

Nothing says summer like a steamy, hot day with a nice cool treat! These Strawberry Banana Popsicles are a creamy, naturally sweet treat. They are great for both kids and adults alike.

I have been loving having a stash of homemade popsicles in my freezer. It’s perfect for a quick go-to treat when I have a sweet tooth. Grab, go, and enjoy!

I made these popsicles with my niece this summer and they were a hit! So if you have any kiddos in your life, these are a very easy and tasty way to make healthy eating fun with kids.

A few notes before you get started:

The almond butter helps make for a very creamy and smooth popsicle. If you or someone you are sharing with has a nut allergy, swap in a seed butter of choice. You could also leave it out, but it will have a more icy texture than smooth texture.

You can use fresh or frozen fruit for this recipe. If you are using frozen, be sure to thaw it out slightly before blending.

If you don’t have popsicle molds, but you have ice cube trays- you could pour the liquid into the ice cube trays and make smoothie cubes. 

Strawberry Banana Popsicles

Ingredients:

4 cups ripe banana slices

2 cup sliced strawberries

3 Tablespoons almond butter

2 teaspoons vanilla

1 cup unsweetened soy milk

Method:

  1. Combine all the ingredients in a high speed blender and blend until smooth.
  2. Pour the mixture into popsicle molds (makes enough for a mold with 10-12 cavities). Freeze the mixture for at least 4-6 hours, but overnight might be preferred for a full freeze.
  3. Remove the popsicles from the molds when set and enjoy!

Notes:

If you have any leftover mixture, add some ice to the blender and blend until smooth. It’s a tasty little treat you can enjoy while you wait for your popsicles to be ready!
