Pineapple Banana Nice Cream

Nice Cream is one of my favorites, especially in the summer! Creamy, cool, and naturally sweet! If you’ve never had nice cream before, it’s a sweet treat that resembles ice cream but with the base of just fruit. 

My go-to Nice Cream is often just plain Vanilla Nice Cream (bananas, vanilla, and unsweetened soy), but sometimes it’s nice to shake it up! This Pineapple Banana Nice Cream gives me Piña colada vibes with the sweet ripe pineapple taste. Slip into tropical vacation mode- just for the moment while enjoying this at least.

A few notes before you get started:

I originally made a variation of this recipe when testing my pineapple banana popsicles, and added some ice to it. If you want even more Piña colada vibes, add some ice to this recipe. If you are going for more of an ice cream vibe, leave it as is. 

 

Feel free to try making this in a food processor. I make a Strawberry Banana Nice Cream from NutritionFacts.org and the How Not to Die Cookbook that uses a food processor. Omit the soymilk and if needed just add a splash at a time as needed to help smooth it out to desired texture. 

Pineapple Banana Nice Cream

Ingredients:

1.5 cup frozen pineapple

1.5 cups frozen banana slices

1 teaspoon vanilla

1 cup unsweetened soymilk

Method:

Combine the pineapple, banana, vanilla, and soymilk in a high speed blender. Blend until smooth and creamy.

Optional to top with unsweetened coconut flakes or crushed nuts/ seeds of choice. Enjoy!
