Blueberry Basil Smoothie Bowl

Naturally sweet and refreshing are two words to describe this delicious Blueberry Basil Smoothie Bowl. The basil leaves a refreshing, almost mint-like after taste to this smoothie. Every time I eat this, I am reminded instantly of Frankie & Jo’s a plant-based ice cream shop in Seattle, Washington. It was one of my favorite stomping grounds back when I spent more time in the PNW. Frankie & Jo’s has all these super fancy ice cream combinations (like, lime & watermelon, golden milk) and it’s always inspiring to see how pairings can come together to make such a delicious treat.

Now Blueberry Basil is not anything new. You’ll find plenty of recipes on the internet calling for these together, but it’s still not one that I think to do often— until this recipe, of course. With all the basil growing in my garden, I have been inspired to see all the ways I can use fresh basil.

Smoothies are a regular treat in my house. I like my smoothies thick like ice cream, one that requires a spoon to eat. Not a fan of basil, my Blueberry Banana Smoothie Bowl has been a staple in my household for years. 

 

Blueberry Basil Smoothie Bowl

Ingredients
  

  • ½ cup fresh basil leaves
  • 1 ¼ - 1½ cups unsweetened soymilk (or dairy-free milk of choice)
  • 2 cups sliced frozen banana
  • 2 cups frozen blueberries

Instructions
 

  • Blend the basil and 1 cup soymilk together until the basil is chopped fine.
  • Add the banana and the blueberries. If needed, add an additional ¼ cup of soymilk at a time until the mixture is smooth.
  • Serve up and top with any additional toppings of choice (nuts, seeds, more fruit). Enjoy!
